The tomatoes don't need to be set aside for a month, what the recipe says (not very well) is that the garlic oil that you make in the pan can be kept and stored in the fridge for up to 1 month. Meaning that if you don't use all of the oil for your dinner the extra can be saved in the fridge for other use.
