I caramelised the onions, and put the zucchini in the airfryer with some olive oil spray, for extra crispness. Also added olives and garlic, and followed previous post's advice, and used 200ml of water instead of the original quantity. Sprinkled some parmigiano and a drizzle of olive oil when it came out of the oven. The rest was just as the recipe. Very crispy and tasty. Less rosemary next time, so it doesn't overpower the zucchini flavor.
