This was a bit time consuming, but delicious. I tweaked it a bit. I used 1.5 pounds of boneless chicken breast that I marinated and cooked according to the recipe. I used 8 ounces of dry, whole wheat penne. And instead of making basil pesto from scratch, I just used somewhere between 1/3 to 1/2 cup of store bought basil pesto. Also, I couldn’t find dry, sundried tomatoes, so I did use sundried tomatoes in olive oil in a jar. Worked totally fine. Was so good! The lemon flavor to the chicken was super yummy! Definitely will make again.
