I tried to cheat it by using the bake option in my pressure cooker instead of the actual oven, so this turned out to be more of a stew. Still taste okay.
One thing to be aware of is that this will get VERY SALTY real fast, which I should have foreseen considering that both bacon and cheese are quite salty. If you can, use low sodium version of everything, and DO NOT salt your chicken when you cook it.
