Great meatless meal and affordable with some changes. I didn’t add the mushrooms, tomatoes, or olives. I definitely didn’t purchase then pine nuts ($$). I did roast some sliced almonds and we did like them in the dish, it added a nice crunch. I had feta cheese already but I don’t think it’s super necessary. I did half the amount of asparagus and added fresh raw green beans to roast. I doubled the dressing. I served it with sourdough bread and black beans.
