I've found they are easier to roll and a bit less messy if you chill in the fridge first. 😁

One of the things that I do, don't try and scoop the dough. Roll them into logs approximately 3/4" to 1" before refrigerating. After resting, cut with a scraper or knife then roll and toss into sugar.
It will be much faster and keeps the dough chilled.
