Add a second egg to keep it moist. Use your own breadcrumbs. Our panko breadcrumbs were full of webbing and evil maggots, which I only discovered after the fact. Definitely not buying them again. Discovered the maggots, thankfully, before anyone ate them. I know technically it wouldn't be an issue, since they would be dead by that point, but... no. The experience ruined this recipe for me.
