These turned out incredibly! The first stage was the shortbread base, this was really simple and straightforward, I left mine in the fridge over night and it didn't affect it, so it could definitely be made in bulk/in advance.
The second stage was the caramel, challenging but surprisingly it turned out well. The hardest part was actually finding sweetened condensed coconut milk, I used the nestle vegan alternative and found it in ASDA in the canned fruit bit. I ended up cooking it for a bit more than 15 minutes and it turned out slightly thick, but I didn't have a thermometer so had to eye ball it. I recommend going for 16-17 mins.
The final stage was chocolate, really straight forward but took longer than expected to solidify. They taste incredible and I'm definitely going to make more!
