This was delicious! It was a lighter version of traditional scalloped potatoes. So if you're looking for super cheesy, you might want to add more cheese. I wanted something that was lighter to go with my healthier eating plan. I loved the taste of the Gruyer, and mixed a little parmesan in the layers.
I'd say it doesn't need to cook the full 5 hours. I stopped it around 4 hours and most of the cheese had melted and became oily. Next time I might try it for longer on a low setting. I did mix a little unused cheese when I served it to get back that creamy consistency.
