These went surprisingly well! If your oven heats unevenly, I recommend flipping the tray halfway through cooking time. I also wanted to experiment with food coloring, so I piped half of the cookies onto sheets and then added three drops of red food coloring to the remainder of the batter and mixed gently. I got some cookies that were swirled and some that turned pink, but they all had the same consistency. I also use both parchment paper and a baking mat and both worked fine. I do recommend letting them sit for a moment off of the hot pan before moving them to a cooling rack.
