First time using guanciale instead of bacon and doing it the "traditional" way and I think I just don't like guanciale that much which isn't the fault of the recipe - however, this was the first time making carbonara that the egg actually became a glossy coating as it's supposed to which is something I've been trying to perfect for the past year so I was happy to finally get it right!
