I added shredded chicken to the mixture. To cook, I used my waffle iron instead of frying, it worked as long as the bottom section of the Tortilla wasn't filled too full. I sprayed the outer portions of the tortillas with cooking spray. It did run out bit but not to bad. I was surprised how good it was, however when I was asked to make more, I decided to use the oven by putting them on a cookie sheet with foil ( less mess ) at 350° for about 15 mins..so I was able to make more than 1 at a time, this is the way I will go next time. Much easier. Lol
It was kind of messy to eat but that didn't seem to bother anyone who asked for 2nds.
Very very simple recipe. Will be a meal for those nights when I don't feel like cooking or in a hurry.
P.s. I always shred extra chicken whenever I cook chicken breasts so I have extra on hand for meals that require Shredded Chicken and I don't have time to cook and shred.
