Super good but this is definitely a labor of love dish. Took ages, but well worth it. I also went vegan- mostly. No meat. And a vegan bechamel which I made with buckwheat flour. Turned out good. I also used only half the cinnamon and used shallots in place of onion. Lastly, I added 2 tbsp of balsamic vinegar to the sauce to deepen the flavor.
