I used this recipe as inspiration. 2 aubergines, 1 red pepper. 1x 450g tofu. 3 greedy portions. Doubled the amount of stock. Added 2 tsp miso paste, 1 tsp schezwan pepper, 1tsp 5 spice. Served with roasted sweet potato. Drenched the tofu in cornflour and baked for about 30mins before adding to the stir fry. Delish, but took probably 1hr start to finish. Will cook again and hopefully reduce prep time
