Everyone liked this cheesecake. I'd make some changes next time I make it. The crust was really thick and everyone would have preferred less crust so I would go with 1 cup of graham crackers instead of 1.5 cups. When the cheesecake cooked I had to scrape some of it out of the 7 inch spring form pan to make room for the Dulce de Leche. Then there was no room for the ganache so I poured it over the top and let it drizzle over the edge. Since I'll let the ganache drizzle I will only let it cool a minute so it drizzles better.
Regardless of the need for these slight changes this is still a very good cheesecake.
