It helps the sauce thicken! You could switch it out with other things like arrowroot or cornstarch if you like

Quick tip: if you see your flour or thickening agent clumping at all, simply add it to COLD water, whisk, then add to meat. In this case,I wouldn't use much water. Cold broth works, too
