These did not turn out well for me (more like cakey brownies with a lot more work) but here are some tips that might help you.
1) make the cream cheese mixture first and be prepared to freeze it for an hour or so. You want it pretty hard.
2) make 2 Pattie’s for each cookie with the center thinner (I used a scale and made 3oz Pattie’s). The add the cream cheese in between two Patties and seal. Put in freezer for 15 minutes to keep them from spreading.
3)If you want red cookies get the emulsion or they will look like chocolate cookies.
4) don’t do what I did and add white chocolate chips.
Most off all try to have fun making them.
