If you watch the video it makes the instructions a little different /clearer - the chef had cooked down the bacon and onions a lot more than the recipe would have you do. Also, when it says "set a timer for 20 minutes", that is inclusive of the next step so you will need to tend to the risotto and top up the stock in that time.
I used the "oven baked chicken" recipe from recipe tin eats and it worked well together.
Next time I will cook off the bacon and mushrooms a lot longer for personal preference.
