Made it with 7oz Cod, 2 pieces. Except for the Cajun seasoning I halved the recipe. If I make it with 2 fillets again, and I will, I'll only use 1/2 cup of tomatoes. A little too tomato forward for me.
Made this again, only this time I used Rockfish. I also used canned diced Italian seasoned tomatoes and served it in on top of it spaghetti squash. I seasoned the spaghetti squash with a little butter, salt, pepper and garlic powder. It was very good.
