We had a glut of parsnips so we decided to make this. No waste, so that's nice. Vegetarian, so that's nice. Used all the spices I already owned - also nice. After using a food processor to blend it together, I am filled with regret. It felt like eating Victorian gruel. It is a meal. It is fine.

I had a similar situation recently and decided to use the glutinous slop as a base for vegetable fritters!! Oats, shredded carrots, fennel stalk, herbs etc. would be my first experiment with this I think. You have my gears turning here and I love it! Definitely a win.

This as a filling in a ham and cheese croquette would be delicious. Basically, anywhere a potato is used as mash, replace it with a parsnip!
