I like to swap chickpeas + carrots in place of the original chicken + sweet potato. Plus I add zucchini + spinach for extra veggies. My kids love it so it's a great way to fill them up on veggies! If making with my swap suggestions, cook carrots first then everything else after carrots are most of the way cooked. Then add coconut milk +lime juice + fish sauce after zucchini is mostly cooked. This prevents veggies from overcooking and getting mushy. I like to serve on basmati rice but it's delicious on its own too.
