Really easy to throw together! I roasted my sweet potatoes to get a better flavor and added a little bit of almond milk to moisten the mash. Because of the added moisture of the milk, I slowly added the second 1/2 c of water so that I achieved the right hydration! Focaccia is a very sticky/wet dough! I also added a dash of turmeric to add to the color of the dough.
I made two batches, the first I put in a sheet pan and it came out too thin. I recommend a 9*13in or something like that.
