This one was hard to rate. If I had fresher ingredients (tomatoes and avocado) it would’ve been tastier. But in general, it came out a bit thick even after blending it a few times. I also doubled the recipe to make two servings, so maybe it would’ve been runnier making it one at a time. Basically tasted like a dense pancake on its own, and my partner even added maple syrup to a piece without the avocado and liked it. Not sure if I’d make it the same way again, but it wasn’t terrible. Might try the “crepe” again with different toppings if I’m making it for someone who can’t have all purpose flour, but in general it wouldn’t come top of mind for a future breakfast.
