This is THE best pork loin I’ve ever made according to my husband. The bar was not set high because I ALWAYS overcook pork and it’s dry and not great. I don’t like pork much and even I loved this. It was so tender and juicy. We didn’t need knives. It cut with a fork. Amazing. But here’s the trick: I checked the internal temp after 2.5 hours on low. It was already close to done and only needed 15-20 more minutes in the crockpot. There is no reason to cook it for as long as most recipes say to. Once it was done, I popped it under the broiler until it was browned (I skipped the searing step in the beginning). And then I let it rest until we were almost ready to eat. I also spooned the crockpot juices onto the slices when I served it.
