This is the best cake I’ve made in a while. The cake itself was perfectly moist it was well cooked and it didn’t taste like a box mix. The filling was easy to make, it took some time to set and made it a little difficult to decorate, there were two icing avalanches because of the filling, but it tasted very good.
The icing was amazing. My family is evenly split. Some people absolutely love cream cheese icing and others, including me, don’t care for it. Those who aren’t fans all commented on how good it was. It wasn’t too sweet or overly cream cheesy, but there was a definite bite to the icing that could only have come from the cream cheese. The people who usually love cream cheese icing had nothing to say, so it was probably average for them.
I served it with the extra filling in a bowl for people to top off and some extra strawberry slices. It was great.
