I’m curious to your adding pasta water. How much did you put in? Usually you add the water as the pasta finishes cooking in the sauce, little by little. I always have about 1/4 cup in a measuring cup on the side just to add a little at a time while stirring and letting the sauce simmer. I always take the pasta out shy of “Al dente” so it can spend some time with the sauce.

I put in a 1/4 cup water. Maybe you’re right. I should have added the water little by little while stirring instead of pouring it in all at once 🙈
