I'm an instant gratification impulsive type person, so making a pizza dough that takes 24ish hours goes against everything I am. But I was desperate. I've tried many pizza dough recipes and have found them too dense, or they aren't crispy, or the dough is difficult to work with (can't make it thin enough). Enter this recipe. Wow. The dough was a delight to work with, I was able to make thin pizza crusts AND it was light and crispy! Full of beautiful air bubbles, big and small. Art coming out of the oven. I am thrilled. They say the best things in life take time - now I believe them.
