This was so fantastic. I used plum vinegar instead of white wine vinegar and the second time making it in both the sauce and the beef and oh boy did it pump up the flavor in the best of ways. The white wine vinegar gave it a bit too vinegar of a taste for our liking. If I had to use the white again, I’d at least cut it half, but if you got plum vinegar, sub it and you won’t be sorry!
