I wish i had brined the chicken. I also stuffed the skin with garlic cloves, that was delicious i wish i had done more. I also made my own run for the outside and stuffed my chicken with the clippings and fronds from the fennel. Mine was bland in some places due to inadequate garlic clove stuffing. Brining would’ve helped with the blandness
