I used oat milk and vegetable oil to make it dairy free. They browned quite quickly so didn't stay green and they taste quite nice for healthy muffins. My toddler certainly enjoyed them. It made about 32 mini muffins.
Not sure what's going on in my oven but the ones at the back left rose very strange and were more done than the rest. I must try and keep the empty part of the second tray over there next time!
I cooked them for about 11 minutes...forgot to start the timer so not sure exactly how long
