Loved it! Used arugula instead of spinach because we had a bunch. Texture was the only difference and it worked great. Topped with more fresh shredded parmesan at the end. Will try with sundried tomatoes next time.
NOTE:
- It's not a quick dish. It took over an hour to make. I cooked some steps longer than called for because it wasn't enough time to get the right texture/ thickness to the sauce.
- It says it makes 6 servings, I would argue that it's actually 3-4. We had a package of chicken thighs just shy of 2 pounds with three thighs in it.
- Very rich and high in calories. I would like to attempt a lighter version using milk/ stock instead of whipping cream and thicken with a cornstarch slurry.
