I bumped the beans and corn up to a full can each, whole red pepper, whole jalapeno (less seeds), whole red onion and a full package of taco season. Adjusted the Mayo and sour cream qty. Next time will try to find a finer shredded coleslaw. We like this and sits as a side with quite a few meals. A cup of this is almost a lunch! I store it in a gallon zip lock bag in the fridge, allows me to turn it over to marinate in it's juices!
