I was skeptical because I'm generally not a fan of many eggplant recipes. Don't fool yourself, they don't taste like potato French fries. _However_ they are really really good! They might even be a good introductory eggplant dish for those unfamiliar with it or who haven't liked eggplant in past experience. Try it!
