We used a pre-made green curry paste. This was a little spicy for us, but not crazily so and 5 out of 6 ate it fine. Next time I will pay more attention to reducing the coconut milk more & also probably knock back how much paste I am using by just a hair for that 1 of 6 who was just a little overwhelmed by it.

I also like to switch out some coconut milk for coconut cream. The coconut cream helps take the spiciness down a tiny tad.

You may also want to play around with the green curry paste. At least for me different brands have different spicy levels.
