This was unbelievable! So good! I used siete enchilada sauce. No preservatives. Maybe that was why it was so good because of the fresh ingredients. The enchiladas tasted even better with the cilantro sprinkled on top. I cooked the jalapenos under the cheese layer. I broiled the cheese on top once the dish was done baking. mild spice. Better than I've had at most Mexican restaurants. I usually do not like enchiladas at restaurants. This will be a go-to recipe. So easy as well. I put the chicken in the slow cooker the day before and then shredded it so that I just had to assemble all the ingredients the next day
