You can always reduce or omit ingredients. For instance, I would omit salt and probably the sugar but leave the balsamic vinegar. Have you actually cooked and eaten it?

If you know food, the taste, the textures and how the flavors build upon each other then you don't have to taste a particular dish to understand the approximate taste. For example I would leave out the canned tomatoes and use fresh Roma tomatoes instead. That's just one slight change that would make all the difference. That is, in my opinion.

I agree fresh would be much better. Also if you are truly interested in health you should probably serve it on spaghetti squash or zucchini noodles. And you might note that most Nonnas make their red gravy with a pinch of sugar or more. Another interesting twist might be to use red wine vinegar instead of the balsamic. You can know flavor profiles but you can also discover interesting complexities by experimenting.

Very true 😊 although I tend to put a good Red Wine in my Marinara sauce. Also, I love the idea of using spaghetti squash. My wife and I are learning new ways to prepare our old favorite foods due to current health issues.

Good luck to you. I too have health issues and often resent that I even have to eat. Experimenting with recipes allows creativity and is enjoyable for that.
