Really tasty, hearty dish. I didn't have an aubergine so I substituted courgette, which worked well. The only problem I had was that the butternut squash was still a bit hard, I might leave the ratatouille in the oven longer next time. Overall a nice straightforward recipe that I would definitely make again!
