One of my all-time favourite dishes - I make it with some removals / substitutions as below. Halving the ingredients gets me 3 meals’ worth (I am 5’2).
- No courgette (not a fan)
- Spinach instead of kale (fresh instead of frozen)
- Basmati / long-grain white rice works just as well and is easier to find
- I don’t bother with the extra garlic into the chopped tomatoes
- Skipping the dill doesn’t affect the taste of the salad all that much but is a nice addition
- I add chopped cherry tomatoes to the salad.
