I was pleasantly surprised at how many vegetables are in this dish. It truly is a one pot meal that you don’t have to add anything else to. A lot of one pot meals I always serve with a salad to get the veggies in. However this meal truly has all the veggies you need. I didn’t have celery on hand but I used cauliflower rice that I had in the freezer. It came out delicious. I also added some Worcestershire sauce just to give it a little more savory flavoring. I might consider using beef broth instead of the chicken broth next time however. I also used a larger Dutch oven and made everything on the stove top as in the instructional video however once the ingredients were stirred and the uncooked pasta had been added I threw it in the oven for 20 minutes. I then added the cheese at the end and baked it once more and it came out great.
