This chicken was delicious!! My 9 year old ate half a breast which is a rare. After reading the other notes, here are my adjustments....... I precooked the bacon, I also left the artichokes out. Mom and dad love them but baby girl hasn't mastered level artichoke! 😁 I only had fresh spinach, so I chopped and sauteed it in the bacon fat after pouring out all but was left coating the pan. Who doesn't love a lil extra bacon flavor!?! I made one long slit, stuffed the chicken with cheese mix and added the crispy bacon into the pocket with cheese. Next, i made slits on top of chicken, added bacon to the slits and topped with cheese. Baked at 400° for 20 mins the baked temp off to 350° for the last 15. When done, I let rest under foul for 10 -15 mins. Served with garlic couscous.
