The veg took longer than it said to roast, but maybe I should’ve just cut it into smaller chunks. I added some unpeeled garlic to the roasting tin, then when it had roasted I peeled it and added to the food processor. Made double to feed 10 people and it was polished off. So delicious, really great especially with a nice selection of breads, too. A great autumnal recipe, my mum made this actually, these are her notes.
