Subbed vegan chorizo. I liked what that did to the profile — will probably consider subbing the basil for cilantro and ricotta for cotija next time (add tortilla chips to make it a lasagna?) Enough for 4 with only a light side

Take two: used burrata and fresh basil from the garden. 12oz of chorizo was overpowering taste wise

Also the cook times were way too high this time — only needed 10 minutes for the tomatoes and 16 minutes in the oven. Zucchini was a little crispy still, which is how I like it.
