So made some notable changes to the recipe. Didn't have the spices it called for, so used a mix called herbs de romance. didn't have leek, so used parsnip. Ran out of veg broth, so used half broth, half water. And I used beyond meat original sausage links, which we just cut up and threw in at the same time as the vegs. And.. didn't have an immersion blender, so.. yeah. Because of that, most of the liquid soaked into the vegs. As a result it's not really soup at all, it's more like... idk, maybe stew? Either way, its honestly delicious. Would make again.
