It does specify to search first, and use thick chips vs thin. If it came out dry try editing those steps.
I'm also a big fan of doing a quick brine 30 mins before cooking on pork or steak. It looks weird but the results 2I'll convert you! Also maybe save the lemon juice for near to the end since it's an acid it breaks down some of the fats and I imagine that contribute to the dryness?
