I made a larger batch then what the recipe makes. I used 2 bags rice cauliflower (total 20oz), 1 bag of frozen peas and carrots (12 oz), 4 garlic cloves, 4 eggs, about 1 tbsp ginger, 3/4 yellow onion. I skipped the coconut amino and used soy sauce instead. Topped with green onion. Have plenty left over for lunch tomorrow.
It was perfect. Will be making again.
