Used 1 cup oatmeal (slightly ground in food processor) and one cup of flour. Also didn't have sugar free pancake syrup so used regular, plus maybe an extra tbsp or so. Have to agree with the other comment, kind of bland. Even added extra cinnamon and pumpkin spice. Not bad but probably look for a different recipe for the rest of my pumpkin puree. Also note, I made muffins instead of the loaf.
