Bought 80/20 ground beef because it was cheapest. Ended up being a little too greasy (still delicious though). The onion was large. Coupled with the cattiness of the beef, it took longer to cook everything down until the moisture went away. Since the meat hadn’t browned and caramelized yet, I turned up the heat and kept cooking for another 10 minutes. I also added more spices to up the flavors. American cheese was fine. Only used 1 slice because the kids were not raving fans in their grilled cheeses. It melts great, but maybe couple with cheddar or provolone.
