I used to frequent a cafe owned by a French woman, and this recipe produces eclairs comparable to the authentic French eclairs I used to love. Surprisingly, this recipe is not that hard to make - I was moderately experienced as a baker the first time I made these, and was surprised at how nicely my first attempt at these eclairs came out!
