I thought this was good, BUT… Next time I will increase the time the meat spends in the marinade, I barely got any lemon flavor in the meat, even with the lemon slices on top for the first 45 min.
Next time will just put the lemon slices on the potatoes, or maybe under the skin. The spots of skin not covered by lemons browned up nicely on their own before broiling.
If I need to broil next time, will use the Lo setting instead of high in hopes they will brown more evenly (this was my first time using this oven’s broiler).
The potatoes were delicious and flavorful, the meat was juicy and tender. Just needs a little more flavor in the meat.
