As others have said, doubling the sauce is a very good idea. I used 4 large deseeded home grown Thai peppers for a doubled recipe and it was not very spicy.
I used packaged, dry, “rice stick” noodles purchased from an Asian grocery store. These should be abundant and easy to find at any Asian grocery store, but may be hard to find at a standard grocery store. I think they tasted great. I just poured boiling water over them in a bowl and let it sit for 8 minutes then drained.
Shaoxing wine might also be called shaohshing rice wine.
